Re: Carrot Cookies

I made these a couple of weeks ago to satisfy a carrot cake craving, and they're really wicked good. My fiance's been asking for them since, so we just made them again tonight. They'll definitely become a standard at our house.

The first time I used oil instead of margarine and maple syrup in place of the sugar. That provided enough moisture for the dough to stick together perfectly. The second time we used brown sugar, and then had to add some water to get it all to stick right. They still came out well. Oh, and no need to sprinkle sugar on top. I haven't remembered yet, and haven't missed it. We bake them at 350 for about 20 minutes.

Thanks for a great recipe!

I've made this recipe several ways now, and I love it. I like to use whole wheat pastry flour, which works great and gives it an especially crusty quality. Instead of raisins, I sometimes use dates and walnuts, broken up small. I sprinkle cinnamon and sugar on the top, just a little, before baking. I've got to be careful with these, because I can eat an entire batch myself in one day...

Intriguing twist on a suothern classic. Having grown up in central Texas and having made many batches of cornbread...I kinda like it. I did an iron skillet cornbread version, sauted peppers, corn, onions, and tomatoes, Left the skillet dirty to give flavor and popped it in the oven. It was more crumbly than usual but that's because the gluten in whole wheat flour is still caught in the shell (ground or not it is harder to extract). Maybe next time I'll try it with just a tad of white flour.

I used a vanilla pudding mix for this, but I think the most important part of this recipe is using COCONUT CREAM! there was hardly any coconut taste at all, but this thing was so creamy (but it held in pieces perfectly) that I swear I ate half the thing myself over two days. in a chocolate based crust it is even better!

I've been on a bit of a muffin binge the last few weeks (I've made five batches, three of which were blueberry), and these were BY FAR the best. they really have that bakery-good taste. I recommend adding a teapoon of vanilla, though. I used half applesauce and half oil, just to feel better about myself after eating THREE.

Unfortunately this did not work out well for me. It did not cook in the middle, even after leaving it in the oven for a really long time and raising the oven temperature. I did use spelt flour, and baked it in a loaf pan. Maybe those variations led to the banana bread bummer....... But thanks for posting the recipe. When I slice it thin and throw it in the toaster, it's quite tasty!

If the intense aroma drops aren't for food, I wouldn't use them. My boyfriend's mom makes Coke ham, and he says it's really good, so if you can't find root beer (or sasparilla is also like root beer I think) or cherry Coke or Dr. Pepper, I'd just use regular Coke. OR you could experiment and use the Malzbier, which sounds really interesting.

Pretty good... I had to replace mustard seeds with yellow mustard, canned tomatoes instead of fresh tomatoes, and ground red pepper instead of a chopped red pepper... I probably should have followed the directions exactly but i'm not the greatest with that... but anyways it turned out pretty good... 4 stars

Oh well.

Ok so I changed my mind after trying some of the suggestions... I added maybe 1/4 cup coconut milk, extra tomato paste, some chopped carrots, green onions, lots of red pepper, soy sauce... it turned out awesome and was super easy... thank u fellow vegweber's
