Misture em uma forma de pudim (22x8 cm), untado com manteiga de garrafa. Leve em banho-maria em forno pré-aquecido a 200° por 15 minutos. O Estado asteca fazia a guerra para se alimentar dos prisioneiros, num ritual prévio onde ao Deus Sol eram oferecidos sacrifícios humanos. Mas a dieta não ficava exclusiva à carne humana. Eles também se alimentavam de animais possíveis de serem encontrados nos seus domínios: os cães e os perus. Os perus eram criados pelos índios, atividade bastante antiga, com clima propício para a prosperidade desta criação. Geralmente os astecas cozinhavam o peru acompanhado de cebola, alho-poró e molho à base de pimenta vermelha.&lt;br /&gt;Em 1518, quando do início do contato entre os índios e espanhóis no processo colonizador do México, F. Cortez tomou conhecimento do peru como ave para alimentação exposta no mercado de Tenochtitlán, capital asteca, trazendo, após, alguns exemplares para a Europa. O peru também vivia em estado selvagem nos bosques do Canadá. Foi ao longo do século XVI que a Europa descobriu essa ave, um pouco estranha, que foi chamada de "galinha da Índia", pois muita gente ainda confundia a América com as Índias Ocidentais. Os jesuítas a introduziram como prato em seus colégios religiosos. A Inglaterra tomou conhecimento da ave em 1525, sendo que rapidamente constituiu-se no prato principal da ceia de natal entre alguns países europeus, e somente após na América do Norte. Para Brillat Savarin, o peru foi um dos mais belos presentes que o Novo Mundo ofereceu ao velho Continente. Em meados do século XIX o peru, praticamente, substituiu o cisne como ave de natal na Inglaterra, popularizando-se definitivamente.&lt;br /&gt;A introdução e fixação do peru como prato principal na Europa e nas Américas, incluindo o Brasil, na comemoração do nascimento de Cristo, transformou o ritual do jantar de Natal em ceia. A abundância, e mesmo a extravagância, caracterizam a essência do momento da ceia de Natal, pois este ritual passou a ser entendido como expressão simbólica do sucesso frente aos ditames da vida cotidiana ao longo do ano. No Brasil, dependendo das disposições financeiras das famílias esta ceia, além do peru assado, pode comportar diversos outros pratos como salpicão, outras saladas, ostras, arroz à grega, pernil de porco, frutas, panetone, castanhas, nozes, bolos.&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://1.bp.blogspot.com/_U5SsH-u58gQ/SYsEGRBO7nI/AAAAAAAABwg/1HEsVfeEpK4/s1600-h/ceia+1.gif"&gt;&lt;img style="margin: 0px auto 10px; display: block; text-align: center; cursor: pointer; width: 278px; height: 319px;" src="http://1.bp.blogspot.com/_U5SsH-u58gQ/SYsEGRBO7nI/AAAAAAAABwg/1HEsVfeEpK4/s400/ceia+1.gif" alt="" id="BLOGGER_PHOTO_ID_5299333892225822322" border="0" /&gt;&lt;/a&gt; No sentido da ceia como festa, o prato principal deve ser o assado pois, segundo Levi-Strauss, de acordo com as nossas convenções sempre que o menu inclui um prato de carne assada ser-lhe-á conferido um lugar de honra no centro da refeição. Portanto, num momento de demonstração de abundância, e mesmo de desperdício, o assado recebe um status superior em relação ao cozido. Na obra "O Triangulo Culinário", Strauss revela que do contraste entre os estados assado e cozido emergem características universais: no cozimento se conserva a carne e seus sucos, ao passo que o assado constitui um processo de destruição e perda. Assim um denota economia; o outro prodigalidade; o assado é aristocrático, o cozido é plebeu! Desta forma, os estados dos alimentos são apropriados para usos e abusos como símbolo de diferenciação social.&lt;br /&gt;Em alguns lares, o chefe da família é convocado para trinchar o peru assado e dividi-lo entre os presentes. E neste ritual prevalece a hierarquia entre os convidados bem como as deferências, pois as ofertas das partes do peru, e mesmo de outros assados, eram graduadas segundo a posição social dos convidados:&lt;br /&gt;&lt;br /&gt;1. Ao convidado mais ilustre, o dono da casa dizia: "Caro Sr. ...poderia eu ter a ousadia de lhe oferecer uma parte do perú?";&lt;br /&gt;2. Ao segundo convidado em dignidade, dizia "O Sr. teria a gentileza de aceitar um pedaço de peru?";&lt;br /&gt;3. Ao terceiro convidado na hierarquia à mesa, o dono da casa perguntava: "O Sr. quer peru?";&lt;br /&gt;4. Ao quarto na hierarquia oferecia:"um pouco de peru?";&lt;br /&gt;5. enfim ao quinto perguntava, com um pequeno aceno com a faca, "peru?".&lt;br /&gt;&lt;br /&gt;Ainda no final do século XIX este ritual incluía a arte de amolar a faca; o trinchamento competente da ave pelo chefe de família, sentado ou levantado; as perguntas usuais sobre as partes que se deseja saborear e a oferta do molho. Como comida, principalmente na área rural que é o prodígio da memória gustativa, é considerado rei das festas, de acordo com Rachel de Queiroz, recebendo, antes do abate, um tratamento previamente estabelecido: uma ave nova, no seu tamanho máximo de crescimento, papo amplo, coxa grossa, muita carne de peito e em quantidade suficiente para o número de convivas. Após colocado no quintal era-lhe preparado o porre de véspera da ceia de natal. O seu bico era aberto e despejado dois tragos de pinga goela baixo. Estas medidas eram suficientes para amolecer a carne, largar os músculos e desabar no chão. Um outro método era abrir a goela do peru e enfiar forçosamente punhados e punhados de milho, no sentido de inchar a ave para ser mais facilmente digerida. Daí diretamente para o forno, cujo assado torna-se o prato principal da ceia de Natal bem brasileira. Segundo Nina Horta, em meados dos anos 50, a tradição de comidas bem brasileiras foi rompida.
